Ingredients

1 lbButternut Squash

2 cupSoy Milk

9 ozCanned Red Tomatos

1 tspTable Salt

1 tblsGinger Root
Directions
1. Place small pieces of squash in a saucepan with soy milk. Simmer until squash is soft.2. Add 1 can of tomatoes and puree with squash in a blender. Return to the saucepan.
3. Add the second can of diced tomatoes and mix well. Warm through and add salt and ginger. Serve hot.
