Butternut Squash and Tomato Soup

Ingredients

  • 1 lb 
    Butternut Squash
  • 2 cup 
    Soy Milk
  • 9 oz 
    Canned Red Tomatos
  • 1 tsp 
    Table Salt
  • 1 tbls 
    Ginger Root

Directions

1. Place small pieces of squash in a saucepan with soy milk. Simmer until squash is soft.

2. Add 1 can of tomatoes and puree with squash in a blender. Return to the saucepan.

3. Add the second can of diced tomatoes and mix well. Warm through and add salt and ginger. Serve hot.
