Directions
1. Place potatoes in a medium saucepan. Add water just to cover potatoes and bring to a boil. Do not cover pan. After the water boils, reduce heat and add turmeric and salt to potatoes. Parboil potatoes. Be careful not to overcook them. Drain and place in a medium small bowl.2. Sprinkle red pepper over potatoes and shake bowl to cover potatoes with powder.
3. Add oil to a medium size skillet and heat. add curry and fennel powder. Add potatoes to skillet. Cook over low-heat until golden grown, turning frequently, about 10 minutes or more. Serve immediately.
